After ageing, the paste becomes firm and granular, the colour deepens to a rich amber-ivory, and the aroma fills the room with notes of roasted nuts, dry hay, and aged butter. On the palate, long-crystallised tyrosine crystals deliver a satisfying crunch, while the finish lingers with a gentle, savoury sweetness that only time can produce.
