Pag Cheese (PDO) – The king of Croatian cheeses: Made from 100% sheep's milk from the island of Pag, this cheese with the protected designation of origin (PDO) matures for 6 to 12 months. It is characterised by an intense aroma, a grainy texture and a rich flavour of pastures rich in sea spray and medicinal herbs.
Kolan Cheese – Tradition and quality: A hard cheese made from 100% cow's milk, aged for a minimum of 4 months. Inspired by the Trappists, Kolan has become synonymous with premium cow's milk cheese in Croatia, recognisable for its pleasant aromas and firm structure.
Kozlar Cheese – Freshness of Dalmatia: A semi-hard cheese made from 100% goat's milk from northern Dalmatia. The younger cheese (1-2 months) has mild and pleasant aromas and is ideal for those looking for a lighter yet characterful goat cheese.
Serving suggestion: Build a premium "Gligora platter" – cut the cheeses into triangles and serve with Dalmatian prosciutto, olives, dried figs and walnuts. Each cheese has its own wine: Kozlar loves a fresh Malvazija, Kolan pairs with lighter reds, while Pag cheese calls for a full-bodied Plavac Mali or Teran.

Pag cheese Extra Old, 225 g
The most concentrated expression of the legendary Paški sir — Croatia's only PDO sheep's milk cheese, now aged for a minimum of 12 months to develop its most intense, complex character.
Crafted on the wind-scoured island of Pag, where the fierce bura wind and sparse, salt-dusted pastures give the native Pag sheep's milk an unrivalled depth of flavour. After ageing, the paste becomes firm and granular, the colour deepens to a rich amber-ivory, and the aroma fills the room with notes of roasted nuts, dry hay, and aged butter. On the palate, long-crystallised tyrosine crystals deliver a satisfying crunch, while the finish lingers with a gentle, savoury sweetness that only time can produce.

Pag Cheese PDO
Pag cheese is our most famous and most awarded cheese. Although it represents less than 15% of our total cheese production, it is the flagship of our production and a synonym for the globally recognised quality of Gligora. It is also the first cheese with which Ivan Gligora won the first international recognition for a Croatian cheese, and it remains the most awarded Croatian cheese.
Pag cheese is a limited product, obtained exclusively from sheep's milk from the island of Pag. Its limited nature is tied to the total number of Pag sheep that can freely graze on the pasturelands of the island of Pag.
In addition to its own smaller flock, the Gligora Creamery buys Pag sheep's milk from around a hundred families on the island of Pag in most of the island's settlements, and does so daily during the milking season – which runs from January to the end of June.
