Pag cheese Extra Old, 650 g

Pag cheese Extra Old, 650 g

The extra-old expression of Paški sir — Croatia's most awarded and most famous cheese — aged for a minimum of 12 months in Gligora's cellars to develop remarkable depth. Made exclusively from the milk of indigenous Pag sheep grazing on the island's wind-swept, herb-dusted karst pastures, this cheese is what happens when patient ageing meets the world's most distinctive sheep's milk. Sirana Gligora holds more international awards for Paški sir than any other producer. The paste is deep amber-gold, dense with crystalline calcium lactate crystals that snap on the tongue and deliver an intense burst of umami-savoury character with each bite. Notes of toasted hazelnuts, dried fruit, and the mineral tang of Adriatic salt define the long, layered finish. A serious cheese for serious tables — pair with a full-bodied red (Dingač or top Plavac Mali), aged honey, and the best olive oil you own. 650 g · Sirana Gligora, Kolan, Pag Island, Croatia · 100% Pag sheep's milk · PDO / ZOI · Aged min. 12 months · Quarter wheel

Pag Cheese PDO

Pag cheese is our most famous and most awarded cheese. Although it represents less than 15% of our total cheese production, it is the flagship of our production and a synonym for the globally recognised quality of Gligora. It is also the first cheese with which Ivan Gligora won the first international recognition for a Croatian cheese, and it remains the most awarded Croatian cheese. Pag cheese is a limited product, obtained exclusively from sheep's milk from the island of Pag. Its limited nature is tied to the total number of Pag sheep that can freely graze on the pasturelands of the island of Pag. In addition to its own smaller flock, the Gligora Creamery buys Pag sheep's milk from around a hundred families on the island of Pag in most of the island's settlements, and does so daily during the milking season – which runs from January to the end of June. Pag cheese is produced by a traditional process. The first croatian cheese with a protected designation of origin (PDO).   Type of cheese: Hard cheeseTaste: mild and nuttyShelf life: 180 days, vacuum-packed, 4 to 8 °C Status: Designation of origin – PDO Best storage conditions: 8 - 16 °C; 75 - 80% humidityAge: 3-6 months Awards Year Competition Award / Recognition 2025 World Cheese Awards Bronze 2025 Great Taste Awards (UK) 2 Stars 2024 Great Taste Awards (UK) 2 Stars 2023 World Cheese Awards Bronze 2023 Great Taste Awards (UK) 2 Stars (PDO) 2022 World Cheese Awards Gold 2022 Great Taste Awards (UK) 2 Stars (PDO) 2021 Great Taste Awards (UK) 1 Star 2021 World Cheese Awards Silver 2021 World Cheese Awards Bronze 2020 Great Taste Awards (UK) 2 Stars 2019 World Cheese Awards Gold 2019 Great Taste Awards (UK) 3 Stars 2019 International Taste Awards Silver Medal 2018 World Cheese Awards Super Gold 2018 World Cheese Awards Gold 2018 Great Taste Awards (UK) 2 Stars 2018 International Cheese Awards Silver Medal 2017 World Cheese Awards Silver 2016 World Cheese Awards Bronze 2014 iTQi Brussels (Belgium) Crystal Award 2013 Great Taste Awards (UK) 1 Star 2013 Global Cheese Awards (UK) Gold & Best in Class 2013 International Cheese Awards Gold & Best in Class 2012 Great Taste Awards (UK) 2 Stars 2012 Global Cheese Awards (UK) Gold & Best Overseas Cheese 2012 Kasiade (Austria) Gold Medal & 1st Place 2010 World Cheese Awards Super-Gold & Triple Category Best 2010 World Cheese Awards Best New Cheese Trophy 2002 Franciacorta in Bianco 1st Place (Sheep's Milk Category)
