It is characterised by an intense aroma, a grainy texture and a rich flavour of pastures rich in sea spray and medicinal herbs. Kolan Cheese – Tradition and quality: A hard cheese made from 100% cow's milk, aged for a minimum of 4 months. Inspired by the Trappists, Kolan has become synonymous with premium cow's milk cheese in Croatia, recognisable for its pleasant aromas and firm structure. Kozlar Cheese – Freshness of Dalmatia: A semi-hard cheese made from 100% goat's milk from northern Dalmatia. The younger cheese (1-2 months) has mild and pleasant aromas and is ideal for those looking for a lighter yet characterful goat cheese. Serving suggestion: Build a premium "Gligora platter" – cut the cheeses into triangles and serve with Dalmatian prosciutto, olives, dried figs and walnuts.
