Žigljen cheese is a hard cheese that brings together the best of cow's and sheep's milk, produced in Dalmatia, Lika and Kordun. Inspired by the tradition of cheesemaking on the island of Pag, this cheese is a true Gligora classic that was created in 1996. It started as a blend of Pag sheep's milk and cow's milk from the Zadar hinterland, because in the first year there was not enough Pag milk to produce Pag cheese. This innovative approach quickly conquered the market, and Žigljen became a favourite cheese, recognised for its unique flavour combination.
Žigljen has a pronounced aroma and scent, with a compact paste. Paški sir PDO
"Paški sir" is our most famous and most awarded cheese. Although it represents less than 15% of our total cheese production, it is the flagship of our production and a synonym for the globally recognised quality of Gligora. It is also the first cheese with which Ivan Gligora won the first international recognition for a Croatian cheese, and it remains the most awarded Croatian cheese.
Pag cheese is a limited product, obtained exclusively from sheep's milk from the island of Pag. Its limited nature is tied to the total number of Pag sheep that can freely graze on the pasturelands of the island of Pag.
In addition to its own smaller flock, the Gligora Creamery buys Pag sheep's milk from around a hundred families on the island of Pag in most of the island's settlements, and does so daily during the milking season – which runs from January to the end of June.
Pag cheese is produced by a traditional process. The first croatian cheese with a protected designation of origin (PDO).

Težački Cheese Superior
Težački cheese is a unique hard cheese made from 100% cow's milk that we buy from our partners in the Rakovica area, where the cows graze on the fields near the Plitvice Lakes. The animals are kept on pasture, and the untouched nature of this area directly affects the quality and aroma of the cheese.
Inspired by the simplicity and tradition of a "težački" (farmer's) life, this cheese is the result of a desire to keep a primal, natural cheese production. Though a newer member of the Gligora cheese family, it very quickly gained popularity and became one of the best-selling.
The production of Težački cheese is based on a simple but reliable technology that Ivan Gligora perfected through the Kolan cheese, while Šime Gligora wanted to bring the process even closer to more authentic, natural methods. On the label of this cheese is a portrait of Šime's maternal grandfather, Jure Šmit, the first "težak" (farm worker) Šime ever met.

A long time ago, when cheese would lose moisture by the end of summer and become too hard, the old cheesemakers came up with a solution – they would immerse it in wine must or pomace. The cheese would then absorb the moisture and rich wine aroma, turning into a true gourmet treat. At the Gligora Creamery we revived this old tradition of refinement in a modern way, keeping the authenticity of the process. Our cheesemakers adjust the methods every year, following the natural variations of the wine pomace, which ensures a unique taste, aroma and texture for every cheese. The process is entirely natural, without rushing, letting the cheese develop at its own pace.

Žigljen Cheese Aged in Grape Must
A long time ago, when cheese would lose moisture by the end of summer and become too hard, the old cheesemakers came up with a solution – they would immerse it in wine must or pomace. The cheese would then absorb the moisture and rich wine aroma, turning into a true gourmet treat. At the Gligora Creamery we revived this old tradition of refinement in a modern way, keeping the authenticity of the process. Our cheesemakers adjust the methods every year, following the natural variations of the wine pomace, which ensures a unique taste, aroma and texture for every cheese. The process is entirely natural, without rushing, letting the cheese develop at its own pace.
