Our Dairy and Technology
The new Dairy built in 2009 is the most modern Dairy of such size in Croatia. It consists of theproduction area on the zero ground, the ripening area in the basement, and offices and tasting rooms on the first floor. The factory is structured as a functional and efficient whole. Near the Kolan Dairy there is also the most famous Gligora store.

Milk Reception & Quality Testing
Fresh milk is collected daily from local farms, tested for quality, and kept pure through specialized cooling and transport.
Cheese Production
The milk is crafted into hard and semi-hard cheeses with modern equipment, respecting tradition under strict hygiene and certified quality.
Ripening & Maturation
Cheeses are aged in carefully controlled chambers, where precise temperature and humidity shape their distinctive flavor and texture.
Storage & Quality Control
After maturation, cheeses rest in optimal conditions until distribution. Ongoing checks ensure consistency and excellence in every wheel.


Production Excellence & Quality Control
The factory includes modern equipment used for production of hard and semi-hard cheese and curd, while the ripening area, located underground, and other areas are equipped with advanced tools for ripening and air conditioning.
The factory has its own vehicles and cooling equipment for milk collection and delivery. Along with implemented HACCP and IFS quality systems, Gligora ensures top hygiene standards and balanced production, resulting in consistently high-quality
