The Gligora story begins in Kolan, where Ivan Gligora, born into a family of shepherds in 1950, inherited a cheesemaking legacy dating back to 1918. He studied dairy technology to preserve and advance this tradition.

Origins & Family Roots

Although drawn to social sciences and literature, Ivan Gligora left school in Rijeka when financial support ran out, knowing he needed a scholarship to continue. By chance, he discovered that the Zagreb Milk House offered scholarships for students in milk production. Embracing his family tradition, he pursued this path, earning a scholarship to study in Kranj, Slovenia, at the only school in former Yugoslavia with its own milk house.

A Modern Dairy Built on Tradition

In 2009, the Gligoras opened a modern dairy in Kolan, expanding the brand and innovating products. Šime advanced the family legacy, refining recipes and showcasing quality internationally.

Today, Gligora Dairy employs 50+ workers, produces 450+ tons of cheese annually—including 50 tons of Pag cheese—sources milk from 200+ local partners, and exports worldwide, winning top international awards.
