Kolan cheese is a true Gligora classic and the oldest cheese of the Gligora Creamery, created in 1996. This outstanding hard cheese is made from 100% cow's milk from the Zadar hinterland. Although inspired by the traditional Trappist, Kolan cheese has evolved into a unique category, keeping its name and recognisable visual identity – the label featuring the little church of St. Jerome from the Kolanje field.
Kolan cheese is distinguished by pleasant aromas and a firm, structured paste. The cheese is 6 months old, and its mildness, together with moderate aromas and flavours, makes it extraordinarily popular among cheese lovers. Today Kolan is one of the best-selling hard cheeses in Croatia.

Pag Cheese (PDO) – The king of Croatian cheeses: Made from 100% sheep's milk from the island of Pag, this cheese with the protected designation of origin (PDO) matures for 6 to 12 months. It is characterised by an intense aroma, a grainy texture and a rich flavour of pastures rich in sea spray and medicinal herbs.
Kolan Cheese – Tradition and quality: A hard cheese made from 100% cow's milk, aged for a minimum of 4 months. Inspired by the Trappists, Kolan has become synonymous with premium cow's milk cheese in Croatia, recognisable for its pleasant aromas and firm structure.
Kozlar Cheese – Freshness of Dalmatia: A semi-hard cheese made from 100% goat's milk from northern Dalmatia. The younger cheese (1-2 months) has mild and pleasant aromas and is ideal for those looking for a lighter yet characterful goat cheese.
Serving suggestion: Build a premium "Gligora platter" – cut the cheeses into triangles and serve with Dalmatian prosciutto, olives, dried figs and walnuts. Each cheese has its own wine: Kozlar loves a fresh Malvazija, Kolan pairs with lighter reds, while Pag cheese calls for a full-bodied Plavac Mali or Teran.

Težački Cheese Superior
Težački cheese is a unique hard cheese made from 100% cow's milk that we buy from our partners in the Rakovica area, where the cows graze on the fields near the Plitvice Lakes. The animals are kept on pasture, and the untouched nature of this area directly affects the quality and aroma of the cheese.
Inspired by the simplicity and tradition of a "težački" (farmer's) life, this cheese is the result of a desire to keep a primal, natural cheese production. Though a newer member of the Gligora cheese family, it very quickly gained popularity and became one of the best-selling.
The production of Težački cheese is based on a simple but reliable technology that Ivan Gligora perfected through the Kolan cheese, while Šime Gligora wanted to bring the process even closer to more authentic, natural methods. On the label of this cheese is a portrait of Šime's maternal grandfather, Jure Šmit, the first "težak" (farm worker) Šime ever met.
Težački cheese is distinguished by a rich aroma and a firm texture. It matures for between 2 and 6 months, and with its balanced flavour and the simplicity of its daily production it has won numerous top awards at both domestic and international markets.
