Pag Cheese Cubes, 125 g

Pag Cheese Cubes, 125 g

Bite-size cubes of the famous Pag cheese (Paški sir) — Croatia's most celebrated PDO cheese, made on the windswept island of Pag from the milk of indigenous sheep that graze on aromatic herbs salted by sea spray. The Gligora dairy is the island's most decorated cheesemaker, and these convenient 125 g cubes deliver the full character of the cheese: firm, golden-amber paste, crystalline structure from careful ageing, and that unmistakable nutty, savoury-mineral flavour with a lingering salty-herbal finish. Perfect for a quick aperitivo, salads, snack boards or pairing with a glass of Žlahtina.

Pag Cheese PDO

Pag cheese is our most famous and most awarded cheese. Although it represents less than 15% of our total cheese production, it is the flagship of our production and a synonym for the globally recognised quality of Gligora. It is also the first cheese with which Ivan Gligora won the first international recognition for a Croatian cheese, and it remains the most awarded Croatian cheese. Pag cheese is a limited product, obtained exclusively from sheep's milk from the island of Pag. Its limited nature is tied to the total number of Pag sheep that can freely graze on the pasturelands of the island of Pag. In addition to its own smaller flock, the Gligora Creamery buys Pag sheep's milk from around a hundred families on the island of Pag in most of the island's settlements, and does so daily during the milking season – which runs from January to the end of June. Pag cheese is produced by a traditional process. The first croatian cheese with a protected designation of origin (PDO).   Type of cheese: Hard cheeseTaste: mild and nuttyShelf life: 180 days, vacuum-packed, 4 to 8 °C Status: Designation of origin – PDO Best storage conditions: 8 - 16 °C; 75 - 80% humidityAge: 3-6 months Awards Year Competition Award / Recognition 2025 World Cheese Awards Bronze 2025 Great Taste Awards (UK) 2 Stars 2024 Great Taste Awards (UK) 2 Stars 2023 World Cheese Awards Bronze 2023 Great Taste Awards (UK) 2 Stars (PDO) 2022 World Cheese Awards Gold 2022 Great Taste Awards (UK) 2 Stars (PDO) 2021 Great Taste Awards (UK) 1 Star 2021 World Cheese Awards Silver 2021 World Cheese Awards Bronze 2020 Great Taste Awards (UK) 2 Stars 2019 World Cheese Awards Gold 2019 Great Taste Awards (UK) 3 Stars 2019 International Taste Awards Silver Medal 2018 World Cheese Awards Super Gold 2018 World Cheese Awards Gold 2018 Great Taste Awards (UK) 2 Stars 2018 International Cheese Awards Silver Medal 2017 World Cheese Awards Silver 2016 World Cheese Awards Bronze 2014 iTQi Brussels (Belgium) Crystal Award 2013 Great Taste Awards (UK) 1 Star 2013 Global Cheese Awards (UK) Gold & Best in Class 2013 International Cheese Awards Gold & Best in Class 2012 Great Taste Awards (UK) 2 Stars 2012 Global Cheese Awards (UK) Gold & Best Overseas Cheese 2012 Kasiade (Austria) Gold Medal & 1st Place 2010 World Cheese Awards Super-Gold & Triple Category Best 2010 World Cheese Awards Best New Cheese Trophy 2002 Franciacorta in Bianco 1st Place (Sheep's Milk Category)

Cheese Wheel Eighths Set: Kolan, Paški PDO, Kozlar (675g)

Discover the richness of flavour of the island of Pag and Dalmatia in one exclusive package. This set brings the three best-known Gligora cheeses, each in practical pre-cut form (one-eighth of a wheel), offering you a complete gastronomic journey through the best of Croatian cheesemaking. What's in the set? Pag Cheese (PDO) – The king of Croatian cheeses: Made from 100% sheep's milk from the island of Pag, this cheese with the protected designation of origin (PDO) matures for 6 to 12 months. It is characterised by an intense aroma, a grainy texture and a rich flavour of pastures rich in sea spray and medicinal herbs. Kolan Cheese – Tradition and quality: A hard cheese made from 100% cow's milk, aged for a minimum of 4 months. Inspired by the Trappists, Kolan has become synonymous with premium cow's milk cheese in Croatia, recognisable for its pleasant aromas and firm structure. Kozlar Cheese – Freshness of Dalmatia: A semi-hard cheese made from 100% goat's milk from northern Dalmatia. The younger cheese (1-2 months) has mild and pleasant aromas and is ideal for those looking for a lighter yet characterful goat cheese. Serving suggestion: Build a premium "Gligora platter" – cut the cheeses into triangles and serve with Dalmatian prosciutto, olives, dried figs and walnuts. Each cheese has its own wine: Kozlar loves a fresh Malvazija, Kolan pairs with lighter reds, while Pag cheese calls for a full-bodied Plavac Mali or Teran.

block of hard cheese Pag

Pag cheese Extra Old, 225 g

The most concentrated expression of the legendary Paški sir — Croatia's only PDO sheep's milk cheese, now aged for a minimum of 12 months to develop its most intense, complex character. Crafted on the wind-scoured island of Pag, where the fierce bura wind and sparse, salt-dusted pastures give the native Pag sheep's milk an unrivalled depth of flavour. After ageing, the paste becomes firm and granular, the colour deepens to a rich amber-ivory, and the aroma fills the room with notes of roasted nuts, dry hay, and aged butter. On the palate, long-crystallised tyrosine crystals deliver a satisfying crunch, while the finish lingers with a gentle, savoury sweetness that only time can produce. At 225 g, this is the ideal size for a premium cheese board, an elevated aperitivo moment, or a considered gift for someone who truly appreciates fine cheese. Pair with a bold Croatian red — Dingač or Plavac Mali — aged honey, or a handful of walnuts. Milk: 100% Pag sheep's milk Ageing: minimum 12 months Designation: PDO (Protected Designation of Origin) Producer: Sirana Gligora, Kolan, island of Pag Weight: 225 g (vacuum-packed)
