Round cake with orange and fig design on packaging against a white background

Hailing from the sun-drenched Island of Rab, this Authentic Fig Cake, known locally as Smokvenjak, is a concentrated essence of Mediterranean summer. Handcrafted using premium sun-dried figs, this traditional delicacy is enriched with a touch of local brandy and aromatic herbs, then pressed into its signature shape. Naturally sweet and rich in texture, it was historically a staple for islanders, but today it stands as a sophisticated gourmet accompaniment. Pag cheese Extra Old, 225 g

Pag cheese Extra Old, 225 g

The most concentrated expression of the legendary Paški sir — Croatia's only PDO sheep's milk cheese, now aged for a minimum of 12 months to develop its most intense, complex character. Crafted on the wind-scoured island of Pag, where the fierce bura wind and sparse, salt-dusted pastures give the native Pag sheep's milk an unrivalled depth of flavour. After ageing, the paste becomes firm and granular, the colour deepens to a rich amber-ivory, and the aroma fills the room with notes of roasted nuts, dry hay, and aged butter. On the palate, long-crystallised tyrosine crystals deliver a satisfying crunch, while the finish lingers with a gentle, savoury sweetness that only time can produce. At 225 g, this is the ideal size for a premium cheese board, an elevated aperitivo moment, or a considered gift for someone who truly appreciates fine cheese. Pair with a bold Croatian red — Dingač or Plavac Mali — aged honey, or a handful of walnuts.

Pag cheese, 225 g

Paški sir — Croatia's most awarded and most famous cheese, made exclusively from the milk of indigenous Pag sheep grazing on the island's wind-swept, herb-dusted karst pastures. Težački Cheese Superior

Težački Cheese Superior

Težački cheese is a unique hard cheese made from 100% cow's milk that we buy from our partners in the Rakovica area, where the cows graze on the fields near the Plitvice Lakes. The animals are kept on pasture, and the untouched nature of this area directly affects the quality and aroma of the cheese. Inspired by the simplicity and tradition of a "težački" (farmer's) life, this cheese is the result of a desire to keep a primal, natural cheese production. Though a newer member of the Gligora cheese family, it very quickly gained popularity and became one of the best-selling. The production of Težački cheese is based on a simple but reliable technology that Ivan Gligora perfected through the Kolan cheese, while Šime Gligora wanted to bring the process even closer to more authentic, natural methods. On the label of this cheese is a portrait of Šime's maternal grandfather, Jure Šmit, the first "težak" (farm worker) Šime ever met. Težački cheese is distinguished by a rich aroma and a firm texture. It matures for between 2 and 6 months, and with its balanced flavour and the simplicity of its daily production it has won numerous top awards at both domestic and international markets. The Superior expression of Gligora's Težački — an elevated tier of the dairy's most rustic, herbaceous cow cheese. Built around carefully selected wheels and given extra care in maturation.

Pag Cheese PDO

Pag cheese is our most famous and most awarded cheese. Although it represents less than 15% of our total cheese production, it is the flagship of our production and a synonym for the globally recognised quality of Gligora. It is also the first cheese with which Ivan Gligora won the first international recognition for a Croatian cheese, and it remains the most awarded Croatian cheese. Pag cheese is a limited product, obtained exclusively from sheep's milk from the island of Pag. Its limited nature is tied to the total number of Pag sheep that can freely graze on the pasturelands of the island of Pag. In addition to its own smaller flock, the Gligora Creamery buys Pag sheep's milk from around a hundred families on the island of Pag in most of the island's settlements, and does so daily during the milking season – which runs from January to the end of June. Pag cheese is produced by a traditional process. Žigljen Cheese – Aged 6 Months

Žigljen cheese is a hard cheese that brings together the best of cow's and sheep's milk, produced in Dalmatia, Lika and Kordun. Inspired by the tradition of cheesemaking on the island of Pag, this cheese is a true Gligora classic that was created in 1996. It started as a blend of Pag sheep's milk and cow's milk from the Zadar hinterland, because in the first year there was not enough Pag milk to produce Pag cheese. Žigljen has a pronounced aroma and scent, with a compact paste. It matures for a minimum of 6 months, and its recognisable texture and rich flavour make it versatile in the kitchen, perfect for enjoying in different dishes. A pantry staple of the Dalmatian kitchen — a slow-simmered tomato sauce in the tradition that has flavoured Sunday tables along the Croatian coast for generations. Šalša is the Dalmatian word for sauce, and ours stays faithful to the version your nona would have stirred for hours: ripe tomatoes reduced down with onion, garlic, olive oil and Mediterranean herbs until the flavour is deep, glossy and unmistakably southern. Use it the way Dalmatians do: as the base for pašticada, ladled over hand-rolled gnocchi, tossed through pasta, spooned onto grilled fish, or simply mopped up with fresh bread. One jar transforms a weeknight dinner into something that smells like a stone village kitchen above the Adriatic.
