Pag Cheese PDO
Pag cheese is our most famous and most awarded cheese. Although it represents less than 15% of our total cheese production, it is the flagship of our production and a synonym for the globally recognised quality of Gligora. It is also the first cheese with which Ivan Gligora won the first international recognition for a Croatian cheese, and it remains the most awarded Croatian cheese.
Pag cheese is a limited product, obtained exclusively from sheep's milk from the island of Pag. Its limited nature is tied to the total number of Pag sheep that can freely graze on the pasturelands of the island of Pag.
In addition to its own smaller flock, the Gligora Creamery buys Pag sheep's milk from around a hundred families on the island of Pag in most of the island's settlements, and does so daily during the milking season – which runs from January to the end of June.
