Dalmatian Šalša – Slow-Cooked Tomato Sauce (340g)
A pantry staple of the Dalmatian kitchen — a slow-simmered tomato sauce in the tradition that has flavoured Sunday tables along the Croatian coast for generations. Šalša is the Dalmatian word for sauce, and ours stays faithful to the version your nona would have stirred for hours: ripe tomatoes reduced down with onion, garlic, olive oil and Mediterranean herbs until the flavour is deep, glossy and unmistakably southern.
Use it the way Dalmatians do: as the base for pašticada, ladled over hand-rolled gnocchi, tossed through pasta, spooned onto grilled fish, or simply mopped up with fresh bread. One jar transforms a weeknight dinner into something that smells like a stone village kitchen above the Adriatic.
Why we love it
Traditional Dalmatian recipe, slow-cooked for a rich, concentrated flavour
Ready-to-use base for pašticada, pasta, gnocchi and seafood stews
A genuine taste of the Croatian coast — straight from the pantry
Net weight: 340 g
Storage: Store in a cool, dry place. Refrigerate after opening and use within 5–7 days.
Pairs beautifully with: Gligora hard cheeses, Dalmatian pršut, a glass of Plavac Mali or Refošk.

Težački Cheese Superior
Težački cheese is a unique hard cheese made from 100% cow's milk that we buy from our partners in the Rakovica area, where the cows graze on the fields near the Plitvice Lakes. The animals are kept on pasture, and the untouched nature of this area directly affects the quality and aroma of the cheese.
Inspired by the simplicity and tradition of a "težački" (farmer's) life, this cheese is the result of a desire to keep a primal, natural cheese production. Though a newer member of the Gligora cheese family, it very quickly gained popularity and became one of the best-selling.
The production of Težački cheese is based on a simple but reliable technology that Ivan Gligora perfected through the Kolan cheese, while Šime Gligora wanted to bring the process even closer to more authentic, natural methods. On the label of this cheese is a portrait of Šime's maternal grandfather, Jure Šmit, the first "težak" (farm worker) Šime ever met.
Težački cheese is distinguished by a rich aroma and a firm texture. It matures for between 2 and 6 months, and with its balanced flavour and the simplicity of its daily production it has won numerous top awards at both domestic and international markets.
The Superior expression of Gligora's Težački — an elevated tier of the dairy's most rustic, herbaceous cow cheese. Built around carefully selected wheels and given extra care in maturation.

Pag Cheese PDO
Pag cheese is our most famous and most awarded cheese. Although it represents less than 15% of our total cheese production, it is the flagship of our production and a synonym for the globally recognised quality of Gligora. It is also the first cheese with which Ivan Gligora won the first international recognition for a Croatian cheese, and it remains the most awarded Croatian cheese.
Pag cheese is a limited product, obtained exclusively from sheep's milk from the island of Pag. Its limited nature is tied to the total number of Pag sheep that can freely graze on the pasturelands of the island of Pag.
In addition to its own smaller flock, the Gligora Creamery buys Pag sheep's milk from around a hundred families on the island of Pag in most of the island's settlements, and does so daily during the milking season – which runs from January to the end of June.
Pag cheese is produced by a traditional process. The first croatian cheese with a protected designation of origin (PDO).

Its delicate herbal undertones make it an ideal choice for those who appreciate the lighter, yet complex side of artisanal cheeses. Serve it thinly sliced with floral honeys, fresh walnuts, or a crisp white wine such as Pošip for a truly elevated gastronomic experience.

Medium-bodied on the palate, gently peppery, with the unmistakable mineral edge of Pag terroir.

Jadranski Cheese
Adriatic cheese is the "younger brother" of our Žigljen, but with a slightly milder flavour. This premium cheese combines cow's and sheep's milk, creating a perfect balance between rich texture and a gentle taste. Bright yellow in colour, creamy, and it melts easily in the mouth, which makes it ideal for lovers of mixed-milk cheeses. With a slightly sweet taste, Adriatic cheese offers a perfect treat for those who prefer gentler yet still rich cheeses. Adriatic cheese has a slightly higher proportion of cow's milk than sheep's milk.

Žigljen Cheese – Aged 6 Months
Žigljen cheese is a hard cheese that brings together the best of cow's and sheep's milk, produced in Dalmatia, Lika and Kordun. Inspired by the tradition of cheesemaking on the island of Pag, this cheese is a true Gligora classic that was created in 1996. It started as a blend of Pag sheep's milk and cow's milk from the Zadar hinterland, because in the first year there was not enough Pag milk to produce Pag cheese. This innovative approach quickly conquered the market, and Žigljen became a favourite cheese, recognised for its unique flavour combination.
Žigljen has a pronounced aroma and scent, with a compact paste. It matures for a minimum of 6 months, and its recognisable texture and rich flavour make it versatile in the kitchen, perfect for enjoying in different dishes. It has won several international awards, which confirms its top-tier quality. Žigljen is ideally stored at 10-12 °C.
