As you would expect, the mix of 3 types of milk give this cheese a very complex flavour. The rind is not too hard and opens to a lovely golden colour consistent throughout with irregular eyes, and the aroma is clean and mild with hints of butterscotch. The taste is interesting from start to finish, the initial creamy mouth feel is quickly overpowered by earthly and nutty notes before the tang of the goats milk kicks in.

Background
Liburnia is the name for the old region mostly compromising of modern day Dalmatia that was inhabited by an industrious seafaring people pre Roman times. Šime Gligora has long wanted to create a mixed milk cheese using all of the best quality milk from our small shepherds concerning cow, sheep and goat and we're all really pleased with the result. Liburnski sir is very much in it's infancy but expect big developments over the coming year.
