Kolan cheese from ash (lug) combines traditional methods with modern approaches, using an ecological way of preservation and aging. This ancient technique, used by Kolan cheesemakers to prevent excessive drying and cracking of cheese rinds, involves coating the cheese with ash from the hearth. This natural process not only protects the cheese but also allows it to continue aging naturally.
Once Kolan cheese is placed in the ash, its texture becomes juicy and elastic, and the flavor becomes buttery and pleasant. This process contributes to its unique texture and rich flavor, making it a perfect choice for lovers of cheeses with character.
Kolan cheese is a classic of Sirana Gligora, created in 1996, and today it is one of the best-selling cheeses in Croatia. The label on this cheese features the Church of St. Jerome from Kolan field, symbolizing the rich tradition and history of this exceptional product.
