Note: cheeses ordered through the webshop are sent by delivery service, in cardboard packaging, in summer months in thermal packaging. All cheeses are vacuum packed (whole wheel, half or quarter).

Is there natural, ecological packaging and canning with biodegradable material? Yes, it is ash, that is, lye.

Also an old secret, seemingly simple and practical. In order to prevent excessive drying of the cheeses and prolong the ripening of their cheeses, as well as to prevent attacks by intruders, the old Kolan cheese makers used to cover the rind of the cheeses with ashes from their hearths. This would prevent drying and cracking of the bark during dry and cold winter storms.

In 2014, we unearthed that secret and successfully recreated the old method with the cheese makers after a long period of trying...

After being placed "in the brine", the cheese continues to ripen internally, the structure of the dough changes to juicy and elastic, and the taste becomes buttery and pleasant. Look for cheeses from Lugo in our boutiques!
