Gospoja prosciutto is a premium Croatian prosciutto, made from carefully selected pork meat from pigs raised on local farms. The production begins with the control of the raw material and the tempering of the meat at temperatures between 0 and 3°C to ensure quality. This is followed by a two-stage salting process. The hams then rest in a salt chamber for at least 15 days.
After salting, the hams are placed in a chamber where wind, the Senj bura, is simulated, which is key to developing the unique flavor. During this phase, which lasts for several weeks, temperature (up to 3°C) and humidity are precisely regulated to allow for optimal drying of the meat.
After the cold phase is completed, the temperature in the chamber is gradually increased to 18°C, and the hams continue their aging process. This process lasts at least 9 months, during which the hams develop their distinctive flavor, aroma, and texture. Gospoja prosciutto is characterized by excellent quality, a rich flavor, and a characteristic texture, making it the perfect choice for those who appreciate authentic, traditional prosciutto.
