Pag Cheese PDO

Pag cheese is our most famous and most awarded cheese. Although it represents less than 15% of our total cheese production, it is the flagship of our production and a synonym for the globally recognised quality of Gligora. It is also the first cheese with which Ivan Gligora won the first international recognition for a Croatian cheese, and it remains the most awarded Croatian cheese. Pag cheese is a limited product, obtained exclusively from sheep's milk from the island of Pag. Its limited nature is tied to the total number of Pag sheep that can freely graze on the pasturelands of the island of Pag. In addition to its own smaller flock, the Gligora Creamery buys Pag sheep's milk from around a hundred families on the island of Pag in most of the island's settlements, and does so daily during the milking season – which runs from January to the end of June. Pag cheese is produced by a traditional process. Kolan Cheese Superior

Kolan Cheese Superior

Kolan cheese is a true Gligora classic and the oldest cheese of the Gligora Creamery, created in 1996. This outstanding hard cheese is made from 100% cow's milk from the Zadar hinterland. Kolan cheese is distinguished by pleasant aromas and a firm, structured paste. The cheese is 6 months old, and its mildness, together with moderate aromas and flavours, makes it extraordinarily popular among cheese lovers. Today Kolan is one of the best-selling hard cheeses in Croatia. The Superior expression of Gligora's Kolan — an elevated tier of one of the dairy's most cherished cow cheeses, named after the small Pag island village. Built around carefully selected wheels and given extra care in maturation, Kolan Superior reveals a beautifully complex savoury character with classic minerality and a long, polished finish. Žigljen Cheese – Aged 6 Months

Žigljen cheese is a hard cheese that brings together the best of cow's and sheep's milk, produced in Dalmatia, Lika and Kordun. Inspired by the tradition of cheesemaking on the island of Pag, this cheese is a true Gligora classic that was created in 1996. It started as a blend of Pag sheep's milk and cow's milk from the Zadar hinterland, because in the first year there was not enough Pag milk to produce Pag cheese. This innovative approach quickly conquered the market, and Žigljen became a favourite cheese, recognised for its unique flavour combination. Žigljen has a pronounced aroma and scent, with a compact paste. It matures for a minimum of 6 months, and its recognisable texture and rich flavour make it versatile in the kitchen, perfect for enjoying in different dishes. It has won several international awards, which confirms its top-tier quality. Žigljen is ideally stored at 10-12 °C.

Žigljen Cheese Aged in Grape Must

A long time ago, when cheese would lose moisture by the end of summer and become too hard, the old cheesemakers came up with a solution – they would immerse it in wine must or pomace. The cheese would then absorb the moisture and rich wine aroma, turning into a true gourmet treat. At the Gligora Creamery we revived this old tradition of refinement in a modern way, keeping the authenticity of the process. Our cheesemakers adjust the methods every year, following the natural variations of the wine pomace, which ensures a unique taste, aroma and texture for every cheese. The process is entirely natural, without rushing, letting the cheese develop at its own pace. Žigljen cheese combines the best of cow's and sheep's milk from Dalmatia, Lika and Kordun. This Gligora classic offers a unique flavour combination with a pronounced aroma and a compact texture, further enriched by wine aromas.

Rosemary-Crusted Artisan Hard Cheese

Our Cow’s Milk Cheese with Rosemary is the delicious result of a journey inspired by time-honored Mediterranean traditions. It all began in 2008 when our friends from Spain visited us, leading to a collaborative exploration of traditional Southern European cheese preservation methods. The Power of Rosemary: Rosemary, an evergreen herb celebrated for its distinctive needle-like leaves and sharp, savory-spicy flavor profile, infuses this hard cheese with an unmistakable aroma and an incredible depth of character. Artisanal Craftsmanship: Pure Inside, Aromatic Outside: The cheese remains completely "clean" and smooth on the inside. The Technique: During the aging process, our cheesemakers apply a specialized coating technique to envelop the exterior in fresh rosemary, allowing the herbal essences to gently mature into the cheese. Gourmet Pairing & Experience: Crafted from high-quality cow's milk, this cheese is tailor-made for lovers of intense, robust, and savory aromas. Its wonderful firm texture makes it an exceptional choice for gourmets looking to experience a unique harmony of traditional taste and innovative aging methods. Težački Cheese Superior

Težački Cheese Superior

Težački cheese is a unique hard cheese made from 100% cow's milk that we buy from our partners in the Rakovica area, where the cows graze on the fields near the Plitvice Lakes. The animals are kept on pasture, and the untouched nature of this area directly affects the quality and aroma of the cheese. Inspired by the simplicity and tradition of a "težački" (farmer's) life, this cheese is the result of a desire to keep a primal, natural cheese production. Though a newer member of the Gligora cheese family, it very quickly gained popularity and became one of the best-selling. The production of Težački cheese is based on a simple but reliable technology that Ivan Gligora perfected through the Kolan cheese, while Šime Gligora wanted to bring the process even closer to more authentic, natural methods. On the label of this cheese is a portrait of Šime's maternal grandfather, Jure Šmit, the first "težak" (farm worker) Šime ever met. Težački cheese is distinguished by a rich aroma and a firm texture. It matures for between 2 and 6 months, and with its balanced flavour and the simplicity of its daily production it has won numerous top awards at both domestic and international markets. The Superior expression of Gligora's Težački — an elevated tier of the dairy's most rustic, herbaceous cow cheese. Built around carefully selected wheels and given extra care in maturation.
