DESCRIPTION OF HARVESTING AND PROCESSING TECHNOLOGY:
With a qualitative selection, the grapes were picked in optimal conditions of ripeness. It was processed under the conditions of an inert atmosphere. Fermentation at 15 to 18 °C in stainless steel barrels with the aim of preserving the primary fruit aromas. After the first thawing, it matured on fine lees in stainless steel barrels.
DESCRIPTION OF THE OENOLOGIST:
This wine has typical well-developed secondary aromatic characteristics of the variety. Due to the need to harmonize higher malic and wine acids, the wine was aged for up to 15 months in stainless steel barrels with cold stabilization. This way of ripening transformed the wine from primary grass and pyrazine aromatic complexes into more mature wine and fruit aromas that associate ripe quince, fig and dry grass.
In gastronomy, due to its dryness and significant minerality, it is recommended to consume shellfish, shrimp, exclusively fish and meat carpaccio and mixed hot and cold salads and young asparagus with raw seafood.
