DESCRIPTION OF HARVESTING AND PROCESSING TECHNOLOGY:
The wines were processed separately with longer cold maceration for better extraction. Maceration of Chardonnay with stem up to 24 hours and Sauvignon without stem up to 12 hours. Pressed on antique wooden presses.
DESCRIPTION OF THE OENOLOGIST'S WINE:
Chardonnay fermentation on own yeasts in Barrique 225 l, malolactic, maturation on fine lees for 24 months. Sauvignon fermentation in stainless steel barrels, maturation on fine lees in reductive conditions for up to 24 months. After 24 months, the wines were combined with further aging in a large wooden barrel for 12 months. Bottled after a total of three years of ripening and aged for one year in barrel.
In gastronomy, this great wine is recommended to be served with mandatory cooling at least two hours earlier. It is an ideal accompaniment to pasta with sauces, all complex meat dishes, and it is a particularly powerful accompaniment to mature aged sheep cheeses and cheeses with mold.
