Note: cheeses ordered through the webshop are delivered in cardboard packaging, in summer months in thermal packaging. All cheeses are vacuum packed (whole wheel, half or quarter).

Pag cheese is our most famous and most awarded cheese. Pag cheese (PDO) is the flagship of our production and synonymous with the world-award-winning quality of Gligor. It is also the first cheese with which Ivan Gigora received the first international recognition for Croatian cheese, and it is certainly the most awarded Croatian cheese.

Pag cheese is a limited product, it is obtained exclusively from sheep's milk from the island of Pag, and only about 200 tons of Pag cheese are produced annually in all registered cheese factories and OPGs on the entire island. Its limitation refers to the total number of Pag sheep that can graze freely on the pastures of the island of Pag.

Sirana Gligora, along with her own small herd, buys Pag sheep's milk every day during the milking season - which lasts from January to the end of June - from about a hundred families on the island of Pag in most of the island's towns.

Pag cheese is produced by a traditional process, according to the specification adopted by the Association of Pag Cheesemakers, and as such is protected by the mark of origin at the level of Croatia, or PDO at the level of the EU.
