The Extra Aged Pag Cheese (min. 12 months) is a true gourmet specialty from the island of Pag, made from 100% sheep’s milk. Each year, we carefully select the best batches and leave them for further aging for at least 12 months, and sometimes up to 24 months, depending on the seasonal milk supply. During this time, the cheese is regularly maintained, turned, and oiled, resulting in a firmer texture and a more intense, sharper taste.
Throughout the aging process, the Pag Cheese loses up to a third of its weight, but this concentration of flavor makes it exceptional. It is ideal to serve with top-quality olive oil, homemade onion, and warm bread, and it pairs excellently with Paški Gegić or red wines like Mali Plavac.
