Kolan cheese aged in olive pomace combines the centuries-old cheesemaking tradition of Pag Island with innovative affinage techniques. This hard cheese, made from cow's milk, matures in olive pomace from Lun's olive groves, acquiring a rich aroma, a subtly tangy flavor, and a unique texture. The affinage process in olive pomace enriches the cheese with oleic acid, known for its health benefits, while enhancing its complex flavor and structure. Each year, the process is carefully adjusted to ensure the exceptional quality of this distinctive product.
Kolan is a Gligora classic, created back in 1996. Today, it stands as one of the best-selling hard cow’s milk cheeses in Croatia. Inspired by Trappist cheese, it has evolved into a recognizable and indispensable part of Gligora’s range.
