Kolan cheese is a cow's milk cheese from the Kordun area, matured in olive pomace.
As always, we try to combine the best - in this case cheese from cow's milk from Banija and Kordun and local olives from Lunjski olive groves on the island of Pag!
This cheese is aged from 4 months or more, with the fact that it gets its special aroma precisely by ripening in the olive pomace, which gives it a slightly more special, intense taste and creates a dark color of the rind that results from the color of the olive pomace.
