Dinarski cheese from wine must is a premium mixed cheese made from goat and cow milk, distinguished by its unique aging process in wine must. Inspired by ancient cheese-making techniques from Dalmatia, this cheese undergoes a natural maturing process in wine pomace, absorbing moisture and acquiring a distinct aroma. In this way, Dinarski cheese develops a rich flavor, and its texture becomes firmer and juicier.
The aging in wine pomace gives this cheese its signature rich aroma, a result of adapting to the specific characteristics of the must each year. This process does not rush the aging, but rather allows the cheese to mature naturally, resulting in unique and deep flavors that stand out in every bite.
Dinarski cheese is our most awarded cheese after Paški cheese, with prestigious awards, including two trophies at WCA and runner-up at the 2014 London WCA. This cheese is perfect for cheese lovers who seek depth of flavor and texture, with the wine must aging adding an extra dimension to it.
