Žigljen cheese in olive pomace is the result of reviving traditional affinage techniques inspired by the centuries-old cheesemaking tradition of Pag Island. This hard cheese is made from cow's and sheep's milk sourced from Dalmatia, Lika, and Kordun and matures in olive pomace from the ancient olive groves of Lun on Pag Island.

The affinage process in olive pomace imparts a rich aroma, a delicate tangy note, and a unique texture, while the olive acid contributes to health benefits and enhances the flavor. Each year, production is adjusted to maintain exceptional quality and distinctive character.
