Carob (Ceratonia siliqua, L.) is a plant that grows independently in the Mediterranean area, from where it spread to California, Australia and South Africa. In Croatia, it grows in the area of central and southern Dalmatia, where it is also known as Šipanksi rogač or Carin - king of carob, a name it got because of its size and taste.
The carob tree grows as an evergreen shrub up to 12 m tall, weighs up to 200 g and can produce up to 300 kg of fruit per tree. It is extremely resistant to drought. Carob pods are oblong in shape, 15-30 cm long, 2-3.5 cm wide and about 1 cm thick.
Carob flour is obtained from the pod, which is rich in natural sugars. It is also used as a natural sweetener, and due to its high content of phosphorus and calcium, carob supports the health of bones and teeth.
