Island of Pag cheese
We own 200 of our own sheep and also buy milk from around 150 family cooperates on the Island of Pag, all of whom rear a specific local breed known as Paška ovca who are autochthonous to our island. These unique sheep have evolved over thousands of years in these particular conditions offered by Pag. The rocky terrain and powerful wind (Bura) make it difficult for cultivation so wild grasses and herbs that prevail are strong and aromatic. The most predominant being a unique strain of Dalmatian sage which is considered by many as the gourmet sage 'par excellence'. The free range Paška ovca travers the rocky pastures in search of their favorite diet of sage, which in turn permeates the taste and quality of the milk.
